However, some of the companies say that the beans have been fermented for just 2 days while others say 5 - 7. I have read that they do not have a chocolate taste (very bitter) until they are 'roasted'. I have called 2 of the companies and could not get my questions answered by the customer service person!
A. There is a substance called 'chocolate liquor', which would be present in greater amounts in the beans that are fermented for seven days.
